Apple added Switch Pro Controller support alongside the Joy-Con in iOS 16: turn on Bluetooth, hold the controller's pairing button on top until the LEDs react, then select it under Bluetooth settings. Pairing to an iPhone doesn't erase its existing pairing with a Switch console.
